Muesli, porridge, and crunchy – our breakfast products are quick and easy to prepare, but you can also create really tasty recipes with them.

" shows how. We embark on a culinary journey with her, from her highlights in 2019 to this Christmas season. In addition, we present you with her three latest Christmas treats prepared with our
Verival breakfast range.

Recipe: Stuffed Cocoa Date Cookies or "Healthy Rawreos"
Ingredients
Cookie Dough
- 100 g Verival almonds (soaked in water for 30 minutes)
- 100 g Verival walnuts
- 100 g Bircher Porridge
- 120 g Verival dates (soaked in water for 30 minutes)
- 1-2 tbsp Verival maple syrup
- 30 g cocoa powder, unsweetened
- 1/2 teaspoon ground cinnamon
- 1 pinch of salt
Filling
- 200 g Verival cashew nuts (soaked in water for 30 minutes)
- 100 g coconut flakes
- 2 tablespoons coconut oil
- 2 tbsp Verival maple syrup
- 1/2 tsp vanilla, ground
Preparation

For the dark 'cookie dough', add the almonds with the walnuts, the muesli mixture, the cocoa powder, cinnamon, salt, and the dates to a food processor and mix until smooth.

Place the mixture on a piece of baking paper. Place a
second sheet of baking paper on top and roll out the mixture about 0.5 cm thin.
Refrigerate for 30 minutes. -
In the meantime, add the cashew nuts with the coconut flakes, coconut oil, vanilla, and maple syrup to the food processor and puree. Puree the mixture until it has a creamy consistency – possibly add some water.

Cut the cookie mass into round cookies with a diameter of approx. 4 cm. Knead the mixture together again and again and roll it out until it is used up. Then put the cookies together, place approx. 1 teaspoon of coconut filling on one cookie, place a second one on top, and press firmly. Store the finished cookies in the refrigerator.

Recipe: Pumpkin Porridge Lucky Balls
Ingredients
- 100 g Verival walnuts
- 100 g Verival almonds (soaked for 30 minutes)
- 50 g Verival pumpkin seeds
- 100 g Verival dates (soaked for 30 minutes)
- 150 g Verival Porridge mixture (e.g. Bircher Porridge )
- 200 g pumpkin puree
- 2-3 tbsp Verival maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp turmeric, ground
Preparation

Add all the ingredients to a food processor and mix until there are no larger pieces left.

With moist hands, form small balls from the mass. Roll these balls in the porridge mixture or chopped pumpkin seeds, as desired. Store in the refrigerator.

Recipe: Healthy Chocolate Crossies
Ingredients
- 120 g cocoa butter
- 70 g cocoa powder, unsweetened
- 1 tsp ground cinnamon
- 4-5 Verival dates, finely chopped
- 4-5 tbsp Verival maple syrup
- 1 pinch Fleur de Sel
- 100 g Verival Organic Cornflakes
- 70 g Verival Urkorn Muesli
Preparation

Melt the cocoa butter with the cocoa powder over a water bath and stir until smooth.

Stir in the cinnamon, the chopped dates, maple syrup, and a pinch of salt.

Finally, mix in the cornflakes and the muesli.

Using two teaspoons, place small piles on a tin with parchment paper.

Let the chocolate crossies set in the fridge for at least 30 minutes. Store in a cool and dry place.

What is your favourite Verival product?
I love the
Urkorn muesli

which is available almost every day in our breakfast yogurt. Now in the cold season, we also really like the
porridge blends

especially the poppy and poppy variety

We also love the dates and the maple syrup.
How do you start the day?
First of all, I ventilate my bedroom and stretch out properly, and take a deep breath. Then there's the classic first oat milk cappuccino, which I prefer to sip comfortably on the couch with my boyfriend and chat about the day ahead.
Which recipe with Verival products have you liked the most so far or have you liked the best?
Phew...everyone! The porridge berry slices were a little highlight for me, but also the cocoa date cookies and the chocolate crossies, especially now in the upcoming Christmas season.
What was your culinary highlight in 2019?
A few weeks ago, we had roasted and fanned butternut squash from the oven with nuts and maple syrup (by the way, also from Verival). Heck, that was our little aroma highlight. Since then, this dish has been available almost weekly (the recipe is of course also on the blog).
What's your ultimate baking tip?
Love & dedication to ingredients and preparation. It's that simple

What can you not miss at all during the Christmas season?
Make lots of homemade cookies and roasted almonds with cinnamon and maple syrup in the kitchen (with a Christmas playlist in the background). Together they watch Christmas films such as 'The Holiday‘ and 'Love Actually‘ and also have a girls' evening with the 'Bridget Jones Marathon‘. Many leisurely walks in the woods belong to the cold season anyway, and then I like to make a Christmas wreath. Oh, and if the weather cooperates, a visit to the snowy mountain with the parents-in-law in Carinthia, and my favorite winter sport – skiing.
What was your favourite food trend in 2019? What do you think will happen to us in 2020?
Reduce/avoid food waste. I was very busy with this topic in 2019. Every food item is valuable. I think it's so great that the 'zero waste‘ trend continues to spread. For example, you can also make a super tasty pesto from carrot greens, or I can easily cook vegetable broth from vegetable chunks/bowls. Fortunately, I think this sustainability aspect will also become even stronger in 2020.
Baking or cooking?
Both!...but I have a tiny preference for baking. I'm just a little sweet tooth.
What should never be missing in your kitchen?
My large, colorfully filled fridge (lots of seasonal fruits & vegetables), my portafilter coffee machine, and of course many breakfast products from Verival
